Long trays live or die on the bread measurement

Wall height

Low enough to lift the sandwich out easily. Above about two inches the walls start to get in the way of eating, which matters for eat-in service.

Board weight

A loaded sub is dense and the tray is long, so the middle wants to sag. Heavier than you would use for a fries tray.

Grease resistance

Essential for hot subs, cheesesteaks, meatball fillings and anything dressed with oil. Optional for a dry deli sandwich.

The print strip
