Austin has one of the most developed mobile food scenes in the country, and it is genuinely different from a food truck market elsewhere: many operators work from semi-permanent trailers on fixed lots rather than moving daily. That changes the storage situation slightly, but not the fundamental constraint — space is still tight and there is no back-of-house.
The second defining feature is a heavy festival and event calendar, which produces sharp seasonal ordering peaks.

A trailer on a fixed lot has slightly more storage than a moving truck, but not much, and it is usually unconditioned. That combination — limited space and an unconditioned environment in a hot climate — argues strongly for ordering in quantities matched to a couple of months rather than a year.
Beyond that the advice is the same as for any mobile operation: flat-pack everything, consolidate to as few lines as the menu allows, batch-assemble during quiet periods, and specify grease resistance because trailer menus skew fried.
Setup costs amortise across the whole season, which makes printing far cheaper per unit than it looks per event.
Outdoor trading means ambient moisture whatever the forecast. A moisture-tolerant board costs less than losing a trading day.
Festival peaks are extreme. Fold stock during setup and quiet spells, never at the window during a rush.

Often, because a trailer concentrates its volume on one or two formats. One or two colours on kraft is inexpensive to set up and suits the local aesthetic better than full-colour work.
For the whole season in one order, stored centrally. Setup costs amortise across the season, so the per-unit price is much better than ordering per event — and you cannot run out mid-weekend.
A moisture-tolerant construction. Ambient humidity affects board before any rain does, and a wet tray with a full load fails in a customer’s hand.
