03 — In detail

Design for the child, not the adult

A tray that works perfectly in a staff canteen can be wrong for a primary school. Children carry trays with less control, put them down harder, and cannot reach as far across a tray to a back compartment. Corners get knocked against door frames and other people.

Practical consequences: rounded corners rather than square, a rim wide enough for small hands to grip properly, a footprint the child can actually see over and reach across, and compartment placement that puts the most-used well nearest the front. None of these cost anything extra if they are designed in.

Four decisions for a school programme

Four covers a main, two sides and a dessert. Five and six suit menus with a separate sauce or a piece of fruit. Look at your whole menu cycle rather than a typical day.

Well volumes

Child portions, not adult ones, and they differ between primary and secondary. If you serve both, decide whether one tray serves the whole estate or whether two are justified.

Footprint

Set by the servery rail, the trolley shelf and the tray return. Measure all three before anything else.

Lid or no lid

Most school service is unlidded and eaten immediately. Lids become necessary for grab-and-go, packed service and anything transported between sites.

Operational details that show up on day one

  • Trays are stacked wet at the end of service — the material has to tolerate standing liquid for a period.
  • Servery staff fill at pace, so wells need to be reachable from the serving side without leaning.
  • The deepest well should be at the back or the side, not the front, or it gets filled first and blocks the others.
  • Nesting height matters: a tray that nests poorly fills a trolley with air on the return journey.
  • If trays are used across several sites, one footprint across all of them simplifies procurement enormously.

What size should the tray be?

Set by your servery rail spacing, trolley shelves and tray return aperture. Measure all three before anything else — those fixtures are expensive to change and the tray is not.

Are portion sizes different for primary and secondary?

Materially, yes. If your estate covers both, decide early whether one tray with generous wells serves everyone or whether two sizes are justified. Two trays doubles the tooling but can reduce food waste noticeably.

Will hot food soften the tray?

Bagasse tolerates hot food far better than uncoated board, which is why the format is used for school meals. We confirm the tested temperature range for the specific grade supplied.

Do the trays stack for return?

Yes — nesting when empty is essential, or trolleys fill with air on the return journey. Consistent well depths make the nest tighter, which is worth considering when the layout is designed.

Can we print the school or authority name on the tray?

Only simply. Bagasse is textured and absorbent, so fine print does not hold. Most school programmes run plain trays, which is also the cheapest option and has no downside in a captive setting.

Are these trays single-use?

These are single-use trays. If your programme uses washable returnable trays, that is a different product in a different material, and we would quote it separately rather than adapting this one.

What about compostability claims for a local authority tender?

We supply the material specification and any certification the grade carries. Tender responses often ask for specific certifications by name, so send us the wording of the requirement and we will tell you plainly whether the material meets it.

How long does tooling take for a custom layout?

Longer than a board die, because it is a formed metal mould. For an academic year start, begin the conversation well before the summer. Where timing is tight we can sometimes trial on an existing tool with a close layout.
