It works less well for brightly coloured desserts and for anything glossy and dark, where the brown reduces contrast. If your range is macarons in bright colours or dark chocolate work, a matt black base will present them better.

Yes, with a moisture-resistant base. The thing to manage is condensation on the dome when the tray moves between temperatures — pack fully chilled, and ask about anti-fog dome material if it is persistent.
